Description
Total Eclipse Squash is a hybrid, patty pan squash with dark green fruits. Also known as "scallop squash," this variety produces miniature, pie-shaped fruits that have a dark green exterior with white specks that resemble stars in the sky. Plants have an upright, bush growing habit which makes fruit easy to see and harvest. Fruits will get as large as 7-8", but are best when harvested small at 3-4" in diameter. Total Eclipse Squash make a quick and easy side dish to complement any meal. Just cut into wedges and saute or use them to make your favorite squash casserole. They have a firmer texture and nuttier flavor than a traditional summer squash.
